Green Chile Relish

Hey again,
Well this is my 4th post and I think it’s high time I do one involving green chile! I mean come on; this is a New Mexican’s recipe blog isn’t it?! Anyway I was sitting around, feeling a bit hungry, and I started thinking about Caliche’s. If you’re not from southern New Mexico you probably don’t know what Caliche’s is. Sad for you isn’t it? O.k. I’ll tell you. Caliche’s is a frozen custard place. Here is their website http://www.caliches.com/. It also has fast food, like hot dogs and nachos. Then I started thinking about chili dogs and frito dogs and well got really hungry.

Now I’m typically a mustard only girl when it comes to hot dogs, but the one and only time I had relish and enjoyed it was at Caliche’s (the one in Alamo). I distinctly remember it because I hate relish normally, can’t stand it. But I was in a rush and starving, so I figured I’d order the first hot dog on the menu. It was DELICIOUS! I didn’t know what kind of relish it was but I decided to find out. So after going to their website I found that it was green chile relish. Green chile on a hot dog? How perfectly simple and awesome! So then I decided to find a good green chile relish recipe and try it out. Here is what I came up with:

Green Chile Relish

Ingredients:

3 to 4 Green Chiles Roasted, Peeled, and Seeded (I used a 10oz can of whole green chiles from Wal-Mart the Tres Hermanas brand)

¼ a Cup Red Wine Vinegar (I used a little less that this but use your judgment)

1 Tablespoon Honey

2 Tablespoons Extra-Virgin Olive Oil

3 Cloves Garlic (I used a garlic press but you could just leave them whole)

1 to 3 Teaspoons of Onion Powder (You could use fresh onion but I don’t like the idea of raw onions on my hot dog)

Salt to taste (Kosher or sea salt would be best)

  1. Put all the ingredients in a food processor (or Blendtec if you have one) and blend until the desired consistency (some people might like it more on the chunky side and if so just chop the garlic and chile and add the other ingredients without blending them).
  2. Taste and add more salt or honey if necessary.
That’s it! It’s really simple and tastes AMAZING! It makes about a cup of relish, enough for several people depending on how heavy on the relish you go. I got the recipe from http://www.foodnetwork.com/recipes/bobby-flay/throwdowns-green-chile-cheeseburgers-recipe.html but instead of using 3 different chiles I just went green. Why would you need more than green? I also nixed the cilantro because it’s evil and I hate it. And I think the reason the relish recipe didn’t include onion was because it was meant to go on burgers that already had onions on it. I have no idea why it didn’t include garlic. Some people are crazy I guess.

But anyway it was great on hot dogs and I bet it would be great on burgers or pretty much anything. Green chile goes with everything, am I right people?

Roasted Hot-dogs and Potatoes

Hello again, 

I know I said in my last post that I was going to use this blog to review restaurants and stuff…But for Christmas I actually tried out some new recipes and I figured I might as well post them here. Now I will still review restaurants on this blog, especially when the Chipotle’s opens here in Shreveport! Anyway here is something I made for breakfast on Christmas. I got the recipe here:

The original recipe calls for kielbasa sausages, but I don’t eat pork. And let’s be honest, kids will eat just about anything if you throw hot-dogs in it. Also you might need more potatoes than the recipe calls for. A good rule of thumb is 1-2 potatoes per person (of course that depends on the size of the potatoes too!). The same goes for the hot-dogs, 1-2 per person.

So yeah I ended up making several changes. Here is my version of this recipe. Keep in mind this is a: gluten-free, dairy free, egg-free, wheat-free, kosher recipe. Believe you me, making something everyone in this house can eat is a pain!

Roasted Hot-dogs and Potatoes

Servings: 6

Ingredients

5-7 Potatoes, scrubbed and chopped into bite-size pieces (skin on)

4-6 uncooked Beef Hot-dogs (or any hot-dogs, again I don’t eat pork), cut into bite-size pieces.

¼ a cup Coconut Oil (enough to cover the bottom of a large skillet).

Spices for seasoning potatoes (Use whatever spices you like. I like Oregano, Paprika, Rosemary, Onion Powder, and Garlic Salt.)

Directions

1. Take a large cast iron skillet and spread the oil over the bottom. It should be enough to coat the potatoes in but not so much that it makes them soggy.

2. Preheat oven to 425°

3. Place the skillet in the oven while it’s preheating (this will make the potatoes cook more evenly).

4. Once the oven is preheated, take out the skillet. Pour the chopped potatoes and hot-dogs into it.

5. Stir the mixture so that it is lightly coated in oil.

6. Sprinkle the spices over the mixture.  Use as many or as few as you like.  It shouldn't need too much salt.

7. Place in oven and bake for 40 minutes to an hour (stirring occasionally) or until potatoes are done.

I fed this to a 3 year old, a 4 year old, and a 7 year old and they loved it!
